Our pork supply chain: From the field to the cured meat
Cinta Senese, Rustico di Montaione and Game from slaughter: authentic flavours of tradition Our meats come from animals raised in a semi-wild state to enhance their taste and quality. We follow the ancient family recipes for producing excellent cured meats, respecting tradition and enhancing the raw materials.
Farm
Ours is a closed-cycle farm, with animals raised in a semi-wild state. The animals grow freely within large fenced woods on our farms, feeding naturally on acorns, chestnuts and other fruits of the undergrowth. To this diet is added a mixture of flours ground in our company mill, specially built to guarantee the highest food quality.
the Salumificio
Our charcuterie factory, equipped with a modern butchering room, processes Cinta Senese pork, Italian pork, and wild boar. Some of the meat is sold fresh, while the rest is transformed into fine Tuscan cured meats.
Thanks to the family's ancient butchery recipes, rich in traditional aromas and spices, our products stand out for their taste and quality. After careful curing in dedicated cellars, the cured meats are sold whole or in vacuum-packed slices. Furthermore, our facility has a clean room

the Cinta Senese
This breed originated in the Montemaggio hills (Montagnola Senese) and the Chianti region, and is currently widespread throughout Tuscany. Thanks to the efforts of some dedicated breeders and the Siena Breeders' Association, the breed has survived and there are currently over 70 breeding farms across Tuscany. Since 2012, the name "Cinta Senese DOP" (Protected Designation of Origin) has designated meat from pigs born, raised, and slaughtered in Tuscany according to strict regulations. The animal is easily recognizable by its characteristic white belt (fascia) encircling its chest and forelegs.
Rustic Montaione
The "Maiale Rustico di Montaione" is a hybrid specifically selected for semi-wild living. The pigs live outdoors in enclosures on the Tognetti Family's farms, which have been committed to short supply chain and sustainability projects for many years. The animals feed on what they find in the woods in addition to the natural feed provided by the farm. No antibiotic treatments are carried out on the farm. The animal is free to move and express its natural behaviour.
This type of farming ensures that normal growth times are respected, avoiding force-feeding, and resulting in a final product with the genuine flavours of yesteryear.
the Wild Boar
The Tuscan countryside and woods have always been the realm of the wild boar. The Tuscan wild boar is an extremely hardy animal that primarily feeds on undergrowth products.
Our wild boar products bear the hallmark of the Tognetti Family's recipes; they are inherently very characteristic and rustic, with a decisive character, just like Tuscany, the land that produced them.
