
Our pork supply chain: From the field to the cured meat
Cinta Senese, Rustico di Montaione and Game from slaughter: authentic flavours of tradition Our meats come from animals raised in a semi-wild state to enhance their taste and quality. We follow the ancient family recipes for producing excellent cured meats, respecting tradition and enhancing the raw materials.

Farm
Ours is a closed-cycle farm, with animals raised in a semi-wild state. The animals grow freely within large fenced woods on our farms, feeding naturally on acorns, chestnuts and other fruits of the undergrowth. To this diet is added a mixture of flours ground in our company mill, specially built to guarantee the highest food quality.

The Salumificio
Our delicatessen, equipped with a modern cutting room, processes Cinta Senese meat, Italian pork and wild boar. A part is destined for sale as fresh meat, while the rest is transformed into fine cured meats
Tuscan. Thanks to the ancient Norcia recipes of the family, rich in traditional aromas and spices, our products stand out for their taste and quality. After careful seasoning in dedicated cells, the cured meats are sold whole or in vacuum-packed slices. In addition, our facility has a clean room
for packaging sliced meats in a protective atmosphere (ATP)
Cinta Senese DOP

The Cinta Senese breed
Originally from the hills of Montagnola Senese and Chianti, Cinta Senese is now widespread throughout Tuscany thanks to the commitment of passionate breeders and
to the Associazione Senese Allevatori. After having risked extinction, this breed was recovered and is now present in over 80 Tuscan farms. Its prized meats have obtained the DOP recognition, synonymous with authenticity and quality. The Cinta Senese is easily recognizable by the characteristic white band that crosses the chest and the forelimbs.

Rustic Montaione
In the enclosures of Poderi Tognetti, located near the village of Montaione, we also raise Italian pigs with a method similar to that of the Cinta Senese, allowing them to grow in a semi-wild environment and following a natural diet. From here comes the “Rustico di Montaione”, a pig that develops high-quality meat. The combination of the meat of these animals and the prized fat of the Cinta Senese gives life to cured meats with a balanced and harmonious taste, less complex than those produced exclusively with Cinta, but still of extraordinary goodness.

The Wild Boar
The countryside and woods of Tuscany have always been the ideal habitat for the wild boar, a rustic and robust animal that feeds mainly on the spontaneous products of the undergrowth. Within our company, the wild boars live naturally in the woodland enclosures, maintaining their characteristics intact. Wild boar cured meats are known for their intense and decisive flavour. In the recipes of the Tognetti family, their wild flavour is harmonised with the addition of lard from pigs raised in a semi-wild state, for a perfect balance between tradition and refinement
